Cauliflower Buffalo Bites

Have you ever come across a recipe that seem to good to be true? The picture just looks so appealing, you just had to give it try? Well, that was this recipe for me. Buffalo Wings used to be one of my favorite dishes. Breaded, un-breaded, baked, fried, batter dip, homemade, or restaurant style you name it I’ve had them. I came across this one the other day and to my pleasant surprise I already had most of the ingredients in my kitchen; water, flour, garlic powder, cauliflower, olive oil and buffalo wing sauce. My mouth drooled with anticipation. You mean I can finally eat “buffalo wings” without all the guilt! What a huge let down I was in store for. To be honest it tasted like cauliflower and buffalo wings sauce…ha, imagine that? But I am no quitter and the thought of a better, healthier “buffalo wing” was my new mission and I was determined to make this recipe work for me. So the second time around I scrapped the directions in the recipe and decided the best way to “make” these buffalo bites work was to gently saute the cauliflower in the diluted buffalo wing sauce. And the taste this time around, was cauliflower in diluted buffalo wing sauce. OK, fine….I get it. You can’t make cauliflower and sauce taste like Buffalo Wings :(. Well, that’s me in the kitchen. What  have you tried to “make” work in your kitchen?
