Tilapia with Pineapple Quinoa (Keen-wah)

Ingredients
  • 1 cup of Quinoa (or brown rice)
  • 4 6oz tilapia fillets
  • 2 tbsp low-sodium tamari soy sauce (or plain soy sauce)
  • 8oz of no-sugar added pineapple pieces (or roughly chopped pineapple chunks), Keep the juice for later use
  • 6 whole scallions (green onions), chopped
  • Seasonings
Instructions
  1. Ahead of time you will need to season your fish and allow to marinate for at least 2 hours. For this recipe I used sea salt and Mrs. Dash table blend. However, feel free to use your favorite seasonings.
  2. Begin by cooking your quinoa according to the instructions on the package. While the quiona is cooking, preheat your oven to 450 degrees. Combine tamaria soy sauce and 2 tbsp of pineapple juice then pour over your tilapia fillets in a baking dish. Allow to cook for 15-20 minutes or until done.
  3. While fish is baking, saute your scallions in a large skillet lightly coat with cooking oil or cooking spay for about 2 minutes. Then add your pineapples chunks and cook for another minute. Finally add ¾ of your quinoa into the scallions and pineapple mixture being sure to stir to keep from burning.
