Loaded Nachos with Vegan Cheese Sauce

I spend many vacations in the city of New Orleans. They are known the world over for their food, in particular their seafood. What many do not realize is their vegan food is equally as good. If ever given the opportunity to travel there, checkout Kush Café and King of Kings food truck.

Not to long ago, on a hunt to try something different. I sampled loaded vegan nachos from King of Kings food truck. I was hooked and set off to recreate in my kitchen.

This is the main recipe I used for the cheese sauce.

I use the following to build my version of loaded Nachos.

  • Vegan Cheese (see recipe link above)
  • Lentil Taco filling
  • Thick Tortilla Chips
  • Homemade Pico de gallo
  • Homemade Guacamole (not the loaded version I make)
  • Pickled Jalapeños peppers
  • Green onion

What would I do differently?

  • Nothing, I liked the sauce as it was
  • I too as stated on her blog, did not use soy sauce. This was a correction from the video.

How my recipe differed?

  • I added about 1/2 cup of cooked white onions to the mixture. I cooked them at the same time as the potatoes and carrots
  • I used more spices, not sure how much more as I did not measure.

I was so nervous to try this recipe. If I had not tried it prior too, I’m not sure I would have picked this one to try. I will say the cheese sauce by itself leaves much to be desired. However, once it was combined with all the nacho topping, it was a perfect complement. Give it a try, let me know what you think.
