Time Saver – Rainbow Slaw (Broccoli, Cabbage and Carrots)

Rainbow Slaw

Rainbow Slaw

I think I may have found the best time saver ever, ok, maybe not ever but I’m sure I can find many uses for this.  I have been known to buy fresh stir fry veggies in a bag (located next to the salad in the produce section). The veggies are usually too large for my liking and most times I end up cutting the pieces down to more bite sized.  I’ve never paid attention to the ingredients inside of the Rainbow Slaw before, as I kept thinking it was Cole Slaw mix. To my surprise it has the same main ingredients I use for stir fries. Since the broccoli, cabbage and carrots are all cut to a uniform size, it should not take too long for everything to cook evenly. An added bonus, this bag was only $2.50.

To date I have use this to cook stir fries (of course) and as a topping for my tacos. Using on my tacos was great as a replacement for lettuce. The crunch it made was wonderful, plus a got more nutrition than I would have gotten from plain lettuce.
