Today is my birthday day (Chef Ria), spring has arrived and I was in the mood for something sweet and fresh. Something light not loaded with sugar and butter. I finally decided to give one of those watermelon cakes floating around on the internet a try. It was much easier than I expected. It took me less than 10 minutes to cut up.
