After waiting what felt like forever, I was finally able to reserve this cookbook from my library. I was so very eager to try many of the recipes. Have I ever mentioned how much I hate working with recipes with 20k ingredients? Many of which, I do not understand. Unfortunately, this book fit that profile. I finally settled in on two recipes to try. I was very excited to try the muffins.It called for a powered egg substitute which I had used before, and rather liked. So, I let that one slide. It was required that I also pickup some sucant (a sweetener made from sugar cane, hence the name) from my local health food store. The recipe calls for the use of wheat flour which was an extra bonus in my book. The fist time I made them I didn’t have enough baking soda and refused to go to the store to buy more. They turned out rather flat. The 2nd time, they were nice and fluffy, yet firm. Banana Nut the 1st time Blueberry Nut the 2nd. I took issues with both. Neither was strong in flavor or sweetness, overall they just didn’t do it for me. I learn the hard way, these puppies do not have a long shelf life. If you are not eating them with in a few days I highly suggest you freeze them. After loving the book, I was so hopeful for the cookbook. Like most cookbooks I come across,  I was disappointed. At least they didn’t cuss me out in the recipes (too much), as they do in the book. I didn’t find many things that were of interest to me or made me want to try something new. If you are looking for the recipe here, sorry you won’t find it. You will need to get the book for yourself and try. Despite how I feel about the book, the author took time and energy to come up with this information. I will not knowingly rip off her hard work.  In saying that, I’m glad I got this book from the library. What do you do when you are stuck with dud of a cookbook? Donate it, re-gift it or let it collect dust on the shelf?
