This sweet vegan skillet cornbread is the real deal — moist, easy to make, and completely from scratch. Honestly, vegan or not, it’s one of the best cornbread recipes I’ve ever tried, and I just might have pulled an Eddie Murphy moment and kept the whole pan for myself.

My Simple Tweaks for the Best Vegan Cornbread

  • Milk swap – I used ¾ cup rice milk + ¼ cup water. Not trying to be fancy… I just ran out of milk.
  • Egg replacer – I went with ground flax seed, which explains the little brown flecks giving my cornbread extra character. To make it, mix 1 tbsp ground flax seed with 3 tbsp water and let it sit for at least 15 minutes until it gets gloppy. (Not the prettiest word, but in this case, it’s exactly what you want.)
  • The secret weapon – A cast iron skillet. It’s what gives that golden, crispy crust that makes this sweet vegan cornbread recipe so satisfying. Cast iron can be tricky to find, but lately I’ve been spotting them more in big-name stores.

Note: Mix your batter well to avoid a mealy texture.
