I never knew how wonderful fire roasted tomatoes could taste, until I tried this Zucchini, Black Bean and Rice Skillet. This recipe takes about 30 minutes to prep and about 30 minutes to cook, and thus does not make a great for a time saver recipe. This skillet dish is a rather hearty meal and can serve as a main dish.  Typically when I cook this, I have enough left over for lunch the next day. Although this recipe calls for specific brand name of ingredients, I use those that I like most.  The ingredients are as follows: zucchini, green bell pepper, canned black beans, canned fire roasted tomatoes with garlic, brown rice and cheese . Don’t fret if you cannot find fire roasted tomatoes with garlic at your local store. Just add a chopped clove in while cooking. I actually prefer it this way. The garlic taste much fresher.
