
Lately I’ve been following Hungry Girl. She seems to have a shortcut for just about everything. These mini cakes were super simple to make and only require two ingredients: a box of cake mix and one 12 oz can of pop (aka soda pop, soda, cold drink, or coke).
They didn’t turn out quite as I expected—they were really sticky—but absolutely delicious. You can use any combination of box cake mix and pop you like. For this batch, I used a yellow cake mix and orange cream soda. The batter was very runny—so runny I didn’t think they would bake properly.
Pay no attention to the added ingredients listed on the box; you won’t use them. Set your oven to 350 degrees and bake until you can pull a clean toothpick out of the middle, or if you gently press on the mini cakes, they will “spring” back.
How simple is that? These Sticky Cakes are a great time and money saver. It only took 5 minutes to mix the cake by hand and about 25 minutes to bake.
Next time, I think I’ll try chocolate cake mix with root beer or cherry coke. What combination will you try?
