Easy Sweet Potato Hummus

Fall means only one thing in our house: football. I, on the other hand, love the slightly cooler weather. Finally being able to enjoy the outdoors without melting, and rocking a nice pair of kicks—even if the mosquitoes are still relentless. My Mister? He couldn’t care about any of it. All he wants to do is park in front of the TV with his remote and snacks. Pee-wee, high school, collegiate, or pros—it doesn’t matter to him.

Thankfully, he’s an easy person to cook for. Hummus is one of his favorites, and this recipe does not disappoint. With simple, easy-to-find ingredients, you’ll be in and out of the kitchen in no time. Serve it with chips, pretzels, or fresh veggies and watch it disappear.

Easy Sweet Potato Hummus

Sweet Potato Hummus made fresh from your kitchen

Ingredients
  

  • 1 lb Mashed Sweet Potatoes
  • 1 can 15 oz of Chickpeas also called Garbanzo Beans
  • ¼ cup Fresh Squeeze Lemon juice
  • 1 clove of garlic
  • 3 Tablespoons of Extra Virgin Olive Oil
  • 2 Teaspoon Cumin
  • Pinch of Salt

Instructions
 

  • Prep the sweet potatoes: Peel and chop the sweet potatoes. Boil until fork-tender, then drain and let them cool. (Use any cooking method you prefer—boiling is just the quickest.)
  • Prep the chickpeas: Add the chickpeas to a small pot and simmer for about 10 minutes. Drain, let them cool, and remove the skins.
  • Blend it all together: Once everything is cooled, add the sweet potatoes, chickpeas, lemon juice, garlic, olive oil, cumin, and salt to a blender or food processor.
  • Process until smooth: Blend until the hummus is creamy. Taste and adjust seasonings as needed.

  1. This sounds interesting! I would have never thought to make hummus with sweet potatoes! While my husband also loves football…he hates hummus so I don’t get to make it much 🙁

  2. I never thought about mixing chickpeas and sweet potato together! That sounds delish. My husband might turn up his nose but thats more for me 😉

  3. I just finished making this Hummus for a party tomorrow. It taste very good. I am betting it will be even better later today.

    1. Thats the down side with these recipes, they always taste better after they had a little time to sit and let the flavors blend. My problem is I want to eat it all right now!
