Cauliflower Buffalo Bites - Take 2

Crispy baked cauliflower bites coated in a light garlic batter, then tossed in bold buffalo sauce. Simple, spicy, and perfect as a snack, appetizer, or easy weeknight side.

Ingredients
  

  • 1 medium sized head of cauliflower
  • 1 Tbsp of garlic powder or less, I love garlic
  • ½ cup of flour
  • ¾ cup of water
  • 1 bottle of hot wing sauce or make your own

Instructions
 

  • Preheat oven to 450°F. Line a baking sheet with parchment paper.
  • Cut cauliflower into bite-sized florets, keeping pieces on the larger side when possible.
  • In a large bowl, combine garlic powder and flour. Whisk in water until you have a thin, pourable batter (similar to crepe batter).
  • Dip each cauliflower piece into the batter, making sure it is fully coated.
  • Place coated cauliflower on the prepared baking sheet in a single layer, leaving space between pieces.
  • Bake for 14 minutes.
  • Remove from oven and allow cauliflower to cool just enough to handle safely.
  • Pour hot wing sauce into a small bowl. Dip each baked cauliflower piece into the sauce until fully coated.
  • Return coated cauliflower to the baking sheet.
  • Bake for an additional 5 minutes, until the sauce sets.
  • Remove from oven and enjoy.

Notes

I've noticed the bigger pieces the better they hold up during this process. The smaller pieces tend to get mushy.
