Vegetarian Chili

Quick and Easy Vegetarian Chili

Cook Time 30 minutes

Ingredients
  

  • 2 Can Kidney bean
  • 1 Can Stewed tomatoes
  • 1/2 Can Italian stewed tomatoes
  • 1/2 Can Mexican stewed tomatoes
  • 1/2 yellow onion
  • 2 cloves of garlic
  • 1 vegetable bouillon cube
  • 1 cup of corn
  • 1 1/2 cup of water
  • cheese for garnish optional
  • pinch of sea salt optional
  • cayenne pepper to taste optional

Instructions
 

  • In a large pot over medium heat, combine the water, bouillon cube, and kidney beans.
  • After 10 minutes, add the roughly chopped stewed tomatoes, garlic, onion, salt, and cayenne pepper. Reduce the heat to low.
  • Ten minutes later, add the corn.
  • Once the chili starts to thicken, turn off the heat and let it sit for an additional 10 minutes.
