Let me be honest, I did not feel like cooking today. It was a long week and I had enough of Adulting. I was too tired to leave the house or pick up the phone to order delivery. Enter Loaded Guacamole. It feels indulgent with a hit of naughty.

Loaded Guacamole

Ingredients

  • 1 Avocado
  • 1/4 Large Onion
  • 1 Large Tomato
  • 1/2 Lime
  • 1/4 tsp Salt
  • Chopped Fresh Cilantro about 5 sprigs
  • 1/4 cup Black Beans
  • 1/4 cup Fresh or Thawed Corn
  • Handful of chopped Lettuce or greens

Instructions

  1. In a bowl combine onion, tomato, cilantro, juice from 1/2 lime and set aside to make Pico de Gallo. This can be made days ahead of time.
  2. Prepare black beans and corn. You can season and cook them or use straight from the container.
  3. In a large bowl cut and mash avocado, add in as much or as little of the pico de gallo as mentioned in step one. The add in black beans, corn and lettuce.
  4. Enjoy with chips or raw veggies.
