Let me be honest—I did not feel like cooking today. It’s been a long week, and I’ve had enough of adulting. I wasn’t in the mood to go out or wait around for delivery. Enter Loaded Guacamole: it feels indulgent with just the right hint of comfort.

Loaded Guacamole

Quick and easy loaded guacamole is mashed avocado mixed with fresh pico de gallo, black beans, corn, and crisp lettuce—perfect as a dip, snack, or light meal when you’re running on empty but still want something nourishing.

Ingredients
  

  • 1 Avocado
  • 1/4 Large Onion
  • 1 Large Tomato
  • 1/2 Lime
  • 1/4 tsp Salt
  • 1/4 cup Black Beans
  • 1/4 cup Fresh or Thawed Corn
  • Chopped Fresh Cilantro about 5 sprigs to taste
  • Handful of chopped Lettuce or greens

Instructions
 

  • Prepare the Pico de Gallo: In a bowl, combine the chopped onion, tomato, cilantro, and juice from half a lime. Set aside. This can be made ahead of time and stored in the refrigerator for a few days.
  • Prepare the Beans and Corn: You can season and cook the black beans and corn to your liking or use them straight from the container.
  • Assemble the Guacamole: In a large bowl, cut and mash the avocado. Add in as much or as little of the prepared Pico de Gallo as desired. Then, mix in the black beans, corn, and chopped lettuce.
  • Serve: Enjoy with chips or raw veggies.
