
Chili is by far one of the all-time cold-weather comfort foods. Make yourself a bowl and enjoy the football game with friends. Vegetarian Chili
Quick and Easy Vegetarian Chili
Ingredients
- 2 Can Kidney bean
- 1 Can Stewed tomatoes
- 1/2 Can Italian stewed tomatoes
- 1/2 Can Mexican stewed tomatoes
- 1/2 yellow onion
- 2 cloves of garlic
- 1 vegetable bouillon cube
- 1 cup of corn
- 1 1/2 cup of water
- cheese for garnish optional
- pinch of sea salt optional
- cayenne pepper to taste optional
Instructions
- In a large pot over medium heat, combine the water, bouillon cube, and kidney beans.
- After 10 minutes, add the roughly chopped stewed tomatoes, garlic, onion, salt, and cayenne pepper. Reduce the heat to low.
- Ten minutes later, add the corn.
- Once the chili starts to thicken, turn off the heat and let it sit for an additional 10 minutes.
